Cooking Thursday: Keto Apple Cider Vinegar Steak & Zucchini Noodles

This is a meal my husband fixes whenever he buys a cheap cut of steak that’s too tough to eat by cooking the “regular” way. (I know that sounds funny. lol) This is cheap, easy and tasty. Anyway, enjoy!

Keto Apple Cider Vinegar Steak & Zucchini Noodles

Marinade: 

1 cup Apple Cider Vinegar
¼ cup Olive Oil
⅓ cup sugar free G. Hughes Hickory BBQ Sauce
1 tablespoon Sriracha Sauce

Ingredients:

1 ½ lbs Round Steak, trimmed & sliced into very thin strips (abt. ½ inch wide)
4 garlic cloves, minced
¼ cup real Butter
½ cup roasted Sweet Peppers (strip cut)
2 tablespoons olive oil
3 Zucchini spiralized or cut in thin strips
Salt & Pepper to taste

Directions:

Mix marinade ingredients and add the steak. Marinate for at least half an hour.
Place half the butter and the olive oil in a wok or similar deep fry pan. Add garlic and stir fry garlic till slightly brown.
Add the steak strips (save the marinade) and continue cooking at medium-high heat for a few minutes, then add zucchini, peppers, and the marinade. Turn up the heat and stir fry until most liquid is gone.
Add the rest of the butter and salt and pepper to taste. Food is done when most of the liquid has evaporated.

Add a dusting of grated Parmesan cheese to taste.
